In our single-item cohort of 957 bagel logs, the median peak was +39 mg/dL and more than half of all responses landed in the high-spike tier. Three levers dominate the outcome: total carb load at the meal (a ≥60g carb meal pushes peaks 40% higher than a lighter build), fat pairing (almond butter drops the peak ~11 mg/dL vs. no fat), and fiber content (high-fiber builds averaging 17.5% lower peaks). Eaten alone at breakfast — the most common context — bagels averaged +40.2 mg/dL across 13,693 logs, essentially at the single-item mean. These are observational, not causal findings.

Bagels are predominantly refined starch — a single medium plain bagel delivers roughly 48g of carbohydrates with minimal fiber or fat to slow digestion. Across 957 logged meals where members ate a bagel alone, the average glucose peak hit +41.5 mg/dL, with 55.7% of responses classified as high. The two biggest levers in the cohort are carb load and fiber content: meals with ≥60g total carbs spiked 40% higher than the low-carb baseline (p<0.001, n=6,501), while high-fiber builds (≥5g) trimmed that response by 17.5% (p<0.001, n=8,311). Fat and protein pairings offer a meaningful secondary brake — fat pairings ≥15g cut peaks by 16.5% — but neither fully offsets a heavy carb load. These effects are observational, not yet established as causal.
This page draws on Signos production CGM data logged between the pipeline's collection window, covering 22,066 meals containing bagels across 7,026 unique members (broader cohort), with a single-item sub-cohort of 957 meals (578 unique members) where a bagel was logged without other foods. Statistical comparisons use Welch's t-test on matched pairs; all modifier effects cited carry p<0.001 unless noted. Cohort filtering restricts to meals with a measured glucose rise between 0 and 100 mg/dL (ppgr_case='regular'). We report mean peak glucose rise across what is a right-skewed distribution; the median is typically a few mg/dL lower than the mean — here, the single-item median is +39 mg/dL vs. a mean of +41.5 mg/dL. Bagel meals were identified via regex matching on logged food names. A minimum of 100 matched meals is required for any food pairing to appear in the recipe builder; modifier slots with fewer than 100 logs are excluded from that feature.
