Across 23,814 logged meals where members ate eggs alone, the average glucose peak was +21.8 mg/dL (median +17 mg/dL). That puts eggs in the lowest tier of any breakfast food in our cohort — well below oatmeal (+38.9 mg/dL), pancakes (+39.9 mg/dL), and waffles (+41.1 mg/dL). The number that matters is what you put on the plate with them: toast adds +6.7 mg/dL (n=57,891), bagels add +12.3 mg/dL (n=12,047), and a breakfast sandwich pushes the mean to +41.6 mg/dL (n=5,661) — a +17.4 mg/dL penalty above the no-carb baseline. Eggs contain roughly 0.4g of net carbohydrate per large egg — essentially zero — which is why 23,814 single-item logs averaged just +21.8 mg/dL and 58.7% of responses stayed below 20 mg/dL. The food itself is a non-factor for glucose. The two modifiers that actually move the number are meal-level carbohydrate load and meal-level sugar content: high carb loads (≥60g) increased peaks 75.9% above the low-carb baseline (n=25,870, p<0.001), while high sugar content (≥20g) raised peaks 55.2% (n=30,490, p<0.001). Fat pairings ≥15g produced a statistically detectable but sub-2 mg/dL increase — consistent with eggs already contributing dietary fat, leaving little room for added fat to change the trajectory. The morning timing effect is also present: logs before 10 am ran 6.8% lower than later-day logs (n=181,773, p<0.001), consistent with higher morning insulin sensitivity — observational, not yet causal.
This page draws on 23,814 single-item egg logs (meals where eggs were logged alone, with no paired foods) from 8,689 unique Signos members, plus a broader 360,226-meal cohort spanning all meal contexts where eggs appeared, collected through the Signos production CGM platform. Data were filtered to postprandial glucose responses (PPGR) between 0 and 100 mg/dL to exclude sensor artifacts and implausible readings. Modifier effects were estimated using Welch's t-test on matched pairs against a defined baseline; all reported effects carry p<0.001 unless noted. We report mean glucose peak across a right-skewed distribution — the median single-item spike of +17 mg/dL is notably lower than the mean of +21.8 mg/dL, which is typical for this food type. Eggs were identified in member logs using a regex matching "egg" or "eggs" as a primary ingredient, with compound dishes excluded (eggplant, egg roll, egg noodles, deviled eggs, fried rice). Any carb-pair or fat-pair slot requires at least 100 matched meals before it appears in the recipe builder.
