What surprised us
What surprised us about millet is how steep its modifier curve is. The +43.5 mg/dL cohort mean is moderately high — but the levers are equally large. Across 425 matched logs, ≥15g of fat trims peaks 22% (p<0.001). Across 172 logs, eating millet before 10am trims peaks 19% (p<0.001). Stack both — South Indian millet upma with ghee at breakfast — and you're closer to +35 mg/dL than the cohort mean. Skip both — a dosa-and-curry lunch with little added fat — and you're closer to +55. Few grains in the atlas show that much range from the modifier table alone.

The cohort regex matches \bmillet\b and explicitly excludes bird-seed millet mentions. Data was filtered to meals with a measured glucose rise between 0 and 100 mg/dL (ppgr_case='regular') to exclude outliers and sensor artifacts. The page primary is the all-meals cohort: mean peak +43.5 mg/dL, median +41 mg/dL, IQR p25–p75: +26 to +58 mg/dL, 67.7% of logs exceeding +30 mg/dL. Cohort confidence is set to medium because the N (860) sits between the medium (≥100) and high (≥500 in our internal scoring, though some scoring uses ≥1,000) thresholds — directional effects are robust but point estimates carry wider uncertainty than higher-cohort foods on this platform.
