Two opposing levers nudge the response: morning timing trimmed the peak by ~17% (p<0.001) and high baseline glucose paradoxically lowered observed deltas (regression to the mean), while protein co-pairings ≥15g added a modest 7.8% (consistent with mozzarella showing up most often in carb-rich meals where protein co-occurs with high-glycemic bases).
This page draws on 25,366 logged meals containing mozzarella from 7,208 unique Signos members, including 1,510 single-item logs (mozzarella alone, no pairings) and 23,856 multi-item meals where mozzarella appeared with other foods, collected through the Signos production CGM platform. Data were filtered to postprandial glucose responses (PPGR) between 0 and 100 mg/dL to exclude sensor artifacts and implausible readings. Modifier effects were estimated using Welch's t-test on matched pairs against a defined baseline; all reported effects carry p<0.001 unless noted. Because mozzarella's published GI=0 and GL=0, every form-slot anchor in the recipe builder is overridden to 0 — the calculator becomes additive-marginal: alone=0, plus the carb-pair marginal, plus the protein-pair marginal. Cohort means for each form remain visible in the underlying JSON (`option_mean_full_cohort`) for transparency. The food was identified using a regex matching "mozzarella" as a primary ingredient, excluding compound dishes where mozzarella was a minor component. Any carb-pair or protein-pair pairing slot requires at least 30 matched meals to surface and 500 to qualify as high confidence.
