What surprised us
What surprised us about naan is that there's no version of it in the cohort that looks 'safe'. The lightest-carb naan meals (0–40g total, n=1,127) still averaged +39.7 mg/dL. Every traditional pairing we tested — curry (+5 mg/dL, n=1,415), dal (+8 mg/dL, n=205), paneer (+5 mg/dL, n=385) — added to the spike rather than blunted it. The one neutral pairing is hummus or dip (n=397, −1 mg/dL), where naan plays a Mediterranean scoop instead of a curry carrier. At GL 32, it's the heaviest single-piece bread on the atlas — and the meal context only stacks the deck.

Statistical comparisons use Welch's t-test on matched pairs; modifier effects cited carry p<0.001 unless noted. Cohort filtering restricts to meals with a measured glucose rise between 0 and 100 mg/dL (ppgr_case='regular'). Mean peak glucose is right-skewed; the cohort median is +42 mg/dL vs. a mean of +44.3 mg/dL, with an IQR spanning p25: +28 to p75: +59.
