No — vinegar alone is glycemically inert (GI=0, zero carbs). The +29.3 mg/dL cohort average across 20,671 logs is driven by the carb the vinegar is paired with, not the acetic acid itself. Acetic acid is not a carbohydrate, so every form anchor in the recipe builder — balsamic, red wine, rice, white wine, malt — sits at 0 mg/dL. The cohort mean exists because members log vinegar on salads with croutons, in vinaigrettes drizzled over grain bowls, on balsamic-glazed dishes, and as marinades for protein-and-rice plates. The food-pair table tells the directional story: marinades pulled the curve −7 mg/dL versus alone (n=190, treatment +24.3 vs baseline +31.5), vinaigrette and salad pairings each −3 (n=4,465 and n=13,821), pickled cucumbers −1 (n=5,315). The much louder lever is total carb load: meals with ≥60g carbs ran 63% higher than the lighter baseline (CI: +15.06 to +16.69 mg/dL, n=3,069 vs n=14,034, p<0.001). High sugar (≥20g) added another +9.5 to +11.2 mg/dL across 2,707 logs. Vinegar's modest blunting effect is real but easily overwhelmed by the carb underneath.

But the carb context is the dominant lever: ≥60g carb pairings lifted peaks 63% (CI: +15.06 to +16.69, n=3,069 vs n=14,034, p<0.001), and very-heavy carb plates (110g+) ran +46.9 mg/dL.
This page draws on 20,671 vinegar-tagged logged meals from 5,684 unique Signos members, collected through the Signos production CGM platform. Data were filtered to postprandial glucose responses (PPGR) between 0 and 100 mg/dL to exclude sensor artifacts and implausible readings. Modifier effects were estimated using Welch's t-test on matched pairs against a defined baseline; all reported effects carry p<0.001 unless noted. Because vinegar has a published glycemic index of 0 and glycemic load of 0, the recipe-builder form anchors are overridden to 0 mg/dL — the underlying cohort means (preserved in `option_mean_full_cohort` per option) reflect the carbs members ate alongside each varietal, not the vinegar itself. The food was identified in member logs using a regex matching 'vinegar' as a primary ingredient, with apple cider vinegar (which has its own page) excluded along with vinegar pie. Any food-pair pairing slot requires at least 30 matched meals before it appears in the recipe builder.
