The viral pitch is that a splash of vinegar 'flattens' the curve — and directionally the cohort agrees: marinades came in −7 mg/dL, dressings and salads −3, pickles −1. This page draws on 20,671 vinegar-tagged logged meals from 5,684 unique Signos members, collected through the Signos production CGM platform. Data were filtered to postprandial glucose responses (PPGR) between 0 and 100 mg/dL to exclude sensor artifacts and implausible readings. Modifier effects were estimated using Welch's t-test on matched pairs against a defined baseline; all reported effects carry p<0.001 unless noted. Because vinegar has a published glycemic index of 0 and glycemic load of 0, the recipe-builder form anchors are overridden to 0 mg/dL — the underlying cohort means (preserved in `option_mean_full_cohort` per option) reflect the carbs members ate alongside each varietal, not the vinegar itself. The food was identified in member logs using a regex matching 'vinegar' as a primary ingredient, with apple cider vinegar (which has its own page) excluded along with vinegar pie. Any food-pair pairing slot requires at least 30 matched meals before it appears in the recipe builder.

Limitations

  • Self-reported portion sizes introduce measurement error — a logged '1 tbsp' may vary substantially in actual quantity, affecting per-serving estimates.
  • Cohort skews health-motivated; Signos members tracking glucose tend to eat more mindfully than the general population, so real-world average pairings may differ.
  • The marinade sub-cohort has medium confidence (n=190); the −7 mg/dL delta should be treated as directional. Malt and champagne sub-cohorts (n=80 and n=13) are flagged low/fail and not included in the recipe-builder primary path.
  • Cohort means appear non-zero (e.g. balsamic +31.6 mg/dL) because members underreport sides — 'logged: vinegar; ate: salad-with-croutons-and-vinaigrette.' The published GI=0 is the editorially correct anchor.
  • The 'shot before meal' viral pattern is hard to isolate in vinegar logs — most members log this behavior with ACV (which has its own page), not balsamic or wine vinegar.
  • Modifier analyses reflect meal-level correlations, not controlled feeding trials — causality cannot be established from observational CGM data alone.
