This page is grounded in 26,102 logged meals containing whole-wheat bread from approximately 6,274 unique Signos members, captured through the Signos production PPGR cohort. Single-item logs (whole-wheat bread eaten alone, n=708 from 474 members) anchor the headline mean of +39.6 mg/dL. Data was filtered to meals with a measured glucose rise between 0 and 100 mg/dL (ppgr_case='regular') to exclude outliers and sensor artifacts; the single-item filter was additionally tightened to require no co-logged food items in the meal. Statistical comparisons between modifier groups use Welch's t-test on matched pairs; all effects reported at p<0.05 minimum, with the dominant modifiers reaching p<0.001. We report the mean peak across this right-skewed distribution — the median is a few mg/dL lower at +38 mg/dL and the IQR spans p25: +25, p75: +52, typical for this data shape. Whole-wheat bread logs were identified via a regex multi-pattern cohort match on the canonical food name and its sub-forms (whole wheat, whole-wheat, whole grain, sourdough, Ezekiel, whole-wheat toast). A minimum of 100 matched meals was required for any food pairing to appear in the recipe builder.

Limitations

  • Self-reported portion sizes introduce measurement error — a 'slice' logged by one member may differ meaningfully in weight and carb content from another's.
  • Cohort skews health-motivated; Signos members are actively monitoring glucose, so general population responses — particularly among people with greater insulin resistance — may differ.
  • The whole-wheat sourdough sub-cohort (n=10) failed the publication threshold and is excluded; Ezekiel sprouted bread (n=11,075, GI ~24 anchor) is reported but pools across brand variants.
  • The toasted whole-wheat sub-cohort (n=81) is small (low confidence); the −1.7 mg/dL delta vs. untoasted is directionally consistent but should be interpreted with caution.
