Across 24,574 logged almond butter meals, the average glucose peak was +25.8 mg/dL (median +22 mg/dL) — solidly low-tier in our cohort, below mixed nuts (+24.9 mg/dL) only by a hair and well under apple (+31.5 mg/dL) or chocolate (+29.0 mg/dL). Almond butter itself is GI=25/GL=1, so its own glycemic contribution is minimal. The dominant lever is the carb vehicle: toast adds +5 mg/dL, a bagel or English muffin adds +5 mg/dL, and pancakes add +4 mg/dL over the off-a-spoon baseline of +25.2 mg/dL. Fruit and veg pairings buffer the curve — celery actually trimmed the response by −3 mg/dL and oatmeal/yogurt/smoothie by −1 mg/dL across thousands of matched logs.

Almond butter is a low-glycemic spread — published GI=25/GL=1, with roughly 6g of net carbs and 18g of fat per 2-tbsp serving — so its cohort-mean peak of +25.8 mg/dL across 24,574 logs is shaped much more by what it's spread on than by the spread itself. The dominant lever measured in the full cohort is total meal carb load: meals with ≥60g of carbs ran 48% higher than the low-carb baseline (n=2,142, p<0.001), and the carb-bucket analysis shows a near-linear escalation from +23.8 mg/dL in light (0–40g) meals to +36.5 mg/dL in very-heavy (110g+) meals — a 53% jump. The carb-pair slot tells the same story at the ingredient level: toast added +5 mg/dL on top of off-a-spoon baseline (n=3,564), bagel/English muffin +5 mg/dL (n=313), pancake +4 mg/dL (n=132), while fruit and veg pairings buffered the curve — apple +2 mg/dL, banana +3 mg/dL, oatmeal/yogurt −1 mg/dL, celery −3 mg/dL. The mechanism is observational, not yet causal, but the pattern is consistent with almond butter's fat and fiber slowing gastric emptying and blunting any glycemic excursion from the carbs riding alongside.
This page draws on 24,574 almond-butter logs from 4,943 unique Signos members, collected through the Signos production CGM platform. Data were filtered to postprandial glucose responses (PPGR) between 0 and 100 mg/dL to exclude sensor artifacts and implausible readings. Modifier effects were estimated using Welch's t-test on matched pairs against a defined baseline; all reported effects carry p<0.001 unless noted. We report mean glucose peak across a right-skewed distribution — the median spike of +22 mg/dL is a few mg/dL lower than the mean of +25.8 mg/dL, which is typical for this type of data. Almond butter has a published GI=25/GL=1 (Harvard reference table, verified), so the form-anchor in the recipe builder reflects the cohort-measured slot mean of +25 mg/dL rather than being forced to zero. The food was identified in member logs using a regex that matched "almond butter" as a primary ingredient, excluding compound dishes where almond butter was a minor component. Any carb-pair pairing slot requires at least 100 matched meals before it is treated as high-confidence in the recipe builder.
