Bacon is a zero-carbohydrate food — it contains no digestible starches or sugars and carries a published glycemic index and glycemic load of 0. In 4,947 single-item logs, the average glucose peak of +24.0 mg/dL is driven primarily by individual metabolic variability, not by bacon itself. The dominant modifier in the full 99,637-meal cohort is total meal carb load: meals with ≥60g of carbs alongside bacon ran 89% higher than light-carb meals (+24.0 mg/dL baseline), and the carb-bucket analysis shows near-linear escalation from +24.0 mg/dL in light-carb meals up to +50.5 mg/dL in very-heavy (110g+) builds — a 110% escalation. Fat from the bacon itself (≥15g fat in the meal) added a modest +6.7% signal, which may reflect the caloric density of the overall meal context rather than a direct glycemic effect. The egg-pairing discount (−5 mg/dL across 60,039 logs) is consistent with protein slowing gastric emptying, though the effect is observational, not yet causal.
This page draws on 4,947 single-item bacon logs (meals where bacon was logged alone, no pairings) from 2,639 unique Signos members, plus a broader 99,637-meal cohort spanning all meal contexts where bacon appeared, collected through the Signos production CGM platform. Data were filtered to postprandial glucose responses (PPGR) between 0 and 100 mg/dL to exclude sensor artifacts and implausible readings. Modifier effects were estimated using Welch's t-test on matched pairs against a defined baseline; all reported effects carry p<0.001 unless noted. The carb-pair slot uses a no-carb baseline of n=71,216 meals (meals that did not match any carb-pairing regex). The protein-pair slot uses a no-co-protein baseline of n=19,989 meals. Any pairing slot requires at least 100 matched meals before it appears in the recipe builder. Canadian bacon and bacon-flavored bits were excluded from the cohort by design — this page measures strip bacon only.
