What surprised us
What surprised us about baguette is that protein pairings — turkey, ham, chicken — showed essentially no reduction vs. no-protein baseline in matched logs (−1 to +1 mg/dL across the three). This page draws on Signos production CGM data logged between March 2025 and April 2026, covering 3,759 meals containing baguette across 2,000 unique members (broader cohort), with a single-item sub-cohort of 176 meals (130 unique members) where baguette was logged without other foods. Statistical comparisons use Welch's t-test on matched pairs; modifier effects cited carry p<0.001 unless otherwise noted — notably, the high_fat (p=0.18) and protein_high (p=0.79) aggregate modifier slots are not statistically significant at the meal-level cut and are not featured as directional rules. Cohort filtering restricts to meals with a measured glucose rise between 0 and 100 mg/dL (ppgr_case='regular'). We report mean peak glucose rise across a right-skewed distribution; the single-item median is +40 mg/dL vs. the mean of +43.6 mg/dL. Baguette meals were identified via regex matching on logged food names; baguette-pizza compound preparations are excluded. A minimum of 30 matched meals is required for any modifier option to appear in the recipe builder.

Limitations

  • Single-item cohort is medium-confidence (n=176) — directional effects are plausible but individual modifier estimates carry wider uncertainty than high-confidence cohorts (n≥500).
  • Self-reported portion sizes introduce noise — a 'baguette' in member logs may range from a single 30g slice to a full 250g loaf, directly affecting carb load and peak estimates.
  • Whole-grain baguette sub-cohort failed the minimum threshold (n=15) and toasted baguette also failed (n=11); neither appears in the recipe builder.
  • Charcuterie / salami pairing is low-confidence (n=51) and cream cheese is low-confidence (n=36); directional deltas are shown but should not be relied upon for precise effect estimates.
  • Fat and protein aggregate modifiers (high_fat ≥15g, protein_high ≥15g) showed no statistically significant effect at the whole-cohort level (p=0.18 and p=0.79 respectively) — individual per-option slots may still show signal.
