What surprised us
What surprised us about cauliflower is how cleanly the cohort split along form lines. Florets, rice, and mashed all sit in the low-to-mid 20s — true vegetable territory. But cauliflower pizza crust averaged +43.9 mg/dL, almost identical to a regular thin-crust pizza in our other cohort cuts. The 'low-carb swap' framing only works if the swap itself stays low-carb. Why this happens, physiologically

Cauliflower is a low-glycemic vegetable (GI=10, GL=1) — a cup of florets contains roughly 5g of carbs, most of which is fiber — so the cohort's +28.4 mg/dL average response is shaped less by the cauliflower itself and more by what surrounds it on the plate, and most of all by what form it takes. The single biggest lever measured in the full cohort is total meal carb load: meals with ≥60g of carbs ran 58.5% higher than baseline (n=5,293, p<0.001), and the carb-bucket analysis shows a near-linear escalation from +25.2 mg/dL in light (0–40g) meals to +45.4 mg/dL in very-heavy (110g+) meals — an 80% jump. This page draws on 43,913 cauliflower logs from 10,059 unique Signos members, collected through the Signos production CGM platform. Data were filtered to postprandial glucose responses (PPGR) between 0 and 100 mg/dL to exclude sensor artifacts and implausible readings. Cauliflower was identified in member logs using a regex matching 'cauliflower' as a primary ingredient. Form-level slot analyses compare each form's mean peak against the steamed/roasted-floret default; carb-pair deltas are estimated using Welch's t-test on matched pairs against an alone baseline. All reported effects carry p<0.001 unless noted. We report mean glucose peak across a right-skewed distribution — the median spike of +24 mg/dL is a few mg/dL lower than the mean of +28.4 mg/dL, which is typical for this type of data. Any form or carb-pair sub-cohort requires at least 30 matched meals before it appears in the recipe builder; a separate raw / crudités form (n=27) was suppressed for falling below threshold.
