The full cohort of 49,974 matched meals averages higher at +26.4 mg/dL, with the gap entirely attributable to what members eat alongside the curds. The single biggest lever measured is total meal carb load: meals with ≥60g of carbs ran 53% higher than the light-carb baseline (CI: +12.3 to +13.7 mg/dL, p<0.001), and the carb-bucket analysis traces a near-linear escalation from +24.5 mg/dL in light (0–40g) meals up to +39.5 mg/dL in heavy (70–110g) builds — a 61% jump driven by bread, fruit, and granola. High-sugar meals (≥20g) ran 44% above the low-sugar baseline (CI: +9.8 to +10.7 mg/dL, n=7,326). Form differences — non-fat vs. low-fat vs. whole-milk vs. small-curd — all land within 3 mg/dL of one another, which is well inside the cohort noise floor.
This page draws on 49,974 cottage cheese logs from 7,927 unique Signos members, with a 4,496-meal single-item sub-cohort (cottage cheese eaten alone, no pairings) used as the baseline reference, collected through the Signos production CGM platform. Data were filtered to postprandial glucose responses (PPGR) between 0 and 100 mg/dL to exclude sensor artifacts and implausible readings. Modifier effects were estimated using Welch's t-test on matched pairs against a defined baseline; reported effects carry p<0.001 unless noted. We report mean glucose peak across a right-skewed distribution — the median single-item spike of +19 mg/dL is a few mg/dL lower than the mean of +21.9 mg/dL, which is typical for this type of data. The food was identified in member logs using a regex matching "cottage cheese" as a primary ingredient, excluding compound dishes (cottage cheese pancakes, casseroles, pies). Any carb-pair pairing slot requires at least 100 matched meals before it appears in the recipe builder.
