This page draws on 4,572 single-item fried chicken logs (meals where fried chicken was logged alone, no pairings) from 2,915 unique Signos members, plus a broader 27,697-meal cohort spanning all meal contexts where fried chicken appeared, collected through the Signos production CGM platform. Data were filtered to postprandial glucose responses (PPGR) between 0 and 100 mg/dL to exclude sensor artifacts and implausible readings. The fried chicken cohort was captured using a regex matching fried chicken, breaded chicken, chicken tenders/strips/nuggets/fingers, KFC, Popeyes, Chick-fil-A, Church's Chicken, Raising Cane's, and chicken-and-waffle entries; KFC Grilled was excluded by a specific anti-pattern. Modifier effects were estimated using Welch's t-test on matched pairs against a defined baseline; all reported effects carry p<0.001 unless noted. Mean glucose peak is reported across a right-skewed distribution — the median single-item spike of +35 mg/dL is slightly below the mean of +37.5 mg/dL. The GI 50 / GL 12 reference is a Phase 2A internal placeholder sourced from published fried-chicken ranges (KFC original-recipe cohort, Atkinson 2008 range); it is flagged for internal verification against the Stage-2 cohort peak and is not displayed to end users.
