In the single-item sub-cohort of 661 logs, the average peak dropped to +20.8 mg/dL with a median of +17 mg/dL — and 60.7% of responses landed below +20 mg/dL. Pumpkin seeds carry a published glycemic index of 46 with a glycemic load of 6 — squarely in the low-GI category — and the Signos cohort confirms that read. Across 15,424 logged meals, the average glucose peak was +25.3 mg/dL, and 46.3% of responses fell in the low-spike tier (below +20 mg/dL). The mechanism is structural: roughly 9g of fat and 5g of fiber per 1-oz serving slow gastric emptying and blunt any digestible-carb excursion. The two largest modifiers in the dataset both come from the meal context, not the seeds themselves: meals with ≥60g of total carbs (n=1,879) ran 56.4% above the lighter-carb baseline (p<0.001), and meals with ≥20g of sugar (n=2,485) spiked 47.4% higher (p<0.001). Carb-bucket escalation is steep — from +22.4 mg/dL in light builds (0–40g carbs) to +40.9 mg/dL in very-heavy builds (110g+) — an 83% climb. All findings are observational, not yet causal.
This page draws on Signos production CGM data logged between March 2025 and April 2026, covering 15,424 meals containing pumpkin seeds across 3,401 unique members, with a single-item sub-cohort of 661 meals (418 unique members) where pepitas were logged without other foods. Statistical comparisons use Welch's t-test on matched pairs; all modifier effects cited carry p<0.001 unless noted otherwise. Cohort filtering restricts to meals with a measured glucose rise between 0 and 100 mg/dL (ppgr_case='regular'). We report mean peak glucose rise; the distribution is right-skewed and the cohort median is +22 mg/dL vs. a mean of +25.3 mg/dL. Pumpkin seed logs were identified via regex matching 'pumpkin seed' or 'pepita' as a primary ingredient, excluding pumpkin seed oil and pumpkin seed butter. A minimum group threshold of 30 matched meals is required for any modifier to appear in the calculator; high-confidence threshold is ≥500 logs.
