Yes — across 1,093 logged meals where members ate sourdough alone, the average glucose peak was +43.4 mg/dL, with 69.7% of responses exceeding the +30 mg/dL threshold. In our single-item cohort of 1,093 sourdough logs, the median peak was +41 mg/dL and the IQR spanned 30 mg/dL (p25: +28, p75: +58). Sourdough's GI 60 sits 11 points below white bread — and the fermentation story is real: lactic and acetic acids from long fermentation slow gastric emptying and starch digestion. Three levers dominate the response: total carb load (very heavy meals at 110g+ average +50.8 mg/dL, vs. +34.1 mg/dL for light builds), fat pairing (avocado drops the peak −7 mg/dL across 2,335 matched logs), and protein pairing (egg reduces the peak −8 mg/dL across 7,036 logs). These are observational, not causal findings.

Sourdough's lower GI vs. standard bread is mechanistically grounded: the lactic and acetic acids produced during long fermentation slow gastric emptying and inhibit alpha-amylase, the enzyme that breaks down starch. Across 1,093 single-item sourdough logs, the average peak was +43.4 mg/dL — high in absolute terms, but the breakfast window (n=8,365) averaged just +34.0 mg/dL, consistent with acid-slowed digestion combining with morning insulin sensitivity. The two biggest response levers are total carb load (very heavy meals at 110g+ average +50.8 mg/dL vs. +34.1 mg/dL for light builds) and fat/protein pairing (fat ≥15g cuts peaks 14.3%; protein ≥15g cuts 10.2%). These effects are observational, not yet established as causal.
This page draws on Signos production CGM data logged between March 2025 and April 2026, covering 19,351 meals containing sourdough across 5,011 unique members (broader cohort), with a single-item sub-cohort of 1,093 meals (674 unique members) where sourdough was logged without other foods. Statistical comparisons use Welch's t-test on matched pairs; all modifier effects cited carry p<0.001 unless noted. Cohort filtering restricts to meals with a measured glucose rise between 0 and 100 mg/dL (ppgr_case='regular'). We report mean peak glucose rise; the single-item median is +41.0 mg/dL vs. a mean of +43.4 mg/dL — the typical right-skew. Sourdough meals were identified via regex on logged food names; sourdough pizza and sourdough pancakes are excluded. A minimum of 100 matched meals is required for any modifier option to appear in the recipe builder.
