This page draws on Signos production CGM data logged between March 2025 and April 2026, covering 19,351 meals containing sourdough across 5,011 unique members (broader cohort), with a single-item sub-cohort of 1,093 meals (674 unique members) where sourdough was logged without other foods. Statistical comparisons use Welch's t-test on matched pairs; all modifier effects cited carry p<0.001 unless noted. Cohort filtering restricts to meals with a measured glucose rise between 0 and 100 mg/dL (ppgr_case='regular'). We report mean peak glucose rise; the single-item median is +41.0 mg/dL vs. a mean of +43.4 mg/dL — the typical right-skew. Sourdough meals were identified via regex on logged food names; sourdough pizza and sourdough pancakes are excluded. A minimum of 100 matched meals is required for any modifier option to appear in the recipe builder.

Limitations

  • Self-reported portion sizes introduce noise — a 'slice of sourdough' in member logs may range from 25g to 60g, directly affecting carb load and peak estimates.
  • Cohort skews health-motivated; members using CGMs tend to be more metabolically aware than the general population, so average responses may be lower than a representative sample would show.
  • Rye sourdough sub-cohort is medium-confidence (n=104); the +2.3 mg/dL delta vs. plain should be treated as directional, not precise.
