Across 9,653 logged meals where members ate strawberries alone, the average glucose peak was +28 mg/dL (median +24 mg/dL). With a published GI of 40 and GL of 4 per cup, strawberries are the lowest-GL berry we tested — well below banana (+38.8 mg/dL) or oatmeal (+38.9 mg/dL) in our matched rankings. The dominant lever isn't the fruit; it's the breakfast carbohydrate underneath. Strawberries on oatmeal pushed the peak to +42.6 mg/dL (+13 mg/dL over baseline, n=1,544), while strawberries blended into a smoothie dropped it to +26.1 mg/dL (−4 mg/dL, n=3,989). Yogurt was effectively neutral at −1 mg/dL across 15,839 matched logs.

Strawberries are a low-GL fruit — published GI of 40, GL of just 4 per cup — so the +28 mg/dL average across 9,653 single-item logs reflects mostly the natural fructose and glucose in the fruit itself. The cohort's biggest levers come from companion foods: meals with ≥60g of total carbs ran 56% higher than the low-carb baseline (n=10,486, p<0.001), and meals with ≥20g of sugar ran 47% higher (n=19,467, p<0.001). Two protective levers pull in the opposite direction — protein pairings (≥15g) cut the response by ~12% (n=46,009, p<0.001), consistent with protein slowing gastric emptying. The mechanism is observational, not causal, but the pattern aligns with the carb-pair slot data: smoothies and yogurt (protein + fat vehicles) blunt the peak; oatmeal and pancakes (more carbs) amplify it.
This page draws on 9,653 single-item Strawberry logs (meals where strawberries were logged alone, no pairings) from 4,863 unique Signos members, plus a broader 69,500-meal cohort spanning all meal contexts where strawberries appeared (13,993 unique members), collected through the Signos production CGM platform. Data were filtered to postprandial glucose responses (PPGR) between 0 and 100 mg/dL to exclude sensor artifacts and implausible readings. Modifier effects were estimated using Welch's t-test on matched pairs against a defined baseline; all reported effects carry p<0.001 unless noted. We report mean glucose peak across a right-skewed distribution — the median single-item spike of +24 mg/dL is a few mg/dL lower than the mean of +28 mg/dL, which is typical for this type of data. The food was identified in member logs using a regex that matched "strawberry" or "strawberries" as a primary ingredient, excluding compound dishes (cake, pie, shortcake, jam, ice cream, milkshake) where strawberries were a flavor component rather than the food itself. Any carb-pair pairing slot requires at least 100 matched meals before it appears in the recipe builder.
