Methodology

This page draws on 26,923 string cheese logs from 5,832 unique Signos members — including 5,487 single-item logs where members ate the cheese with no other food — collected through the Signos production CGM platform. Data were filtered to postprandial glucose responses (PPGR) between 0 and 100 mg/dL to exclude sensor artifacts and implausible readings. Modifier effects were estimated using Welch's t-test on matched pairs against a defined baseline; all reported effects carry p<0.001 unless noted. We report mean glucose peak across a right-skewed distribution — the median single-item spike of +16 mg/dL is several points lower than the mean of +21.3 mg/dL, which is typical for this type of data. Because string cheese has a published GI of 0 and GL of 0, the form-anchor values in the recipe builder are forced to 0 mg/dL; cohort means by form (regular +24.6, reduced-fat +25.7, cheddar-blend +23.8) reflect under-reported pairings in member logs and are preserved in the modifiers JSON for transparency. The food was identified using a regex matching 'string cheese' and 'cheese stick' as primary ingredients, excluding mozzarella sticks (breaded fried) and cracker variants like Cheez-Its.

  • The pretzel carb-pair sub-cohort has medium confidence (n=206); treat its +14 mg/dL delta as a directional estimate pending a larger sample.
  • The charcuterie / lunch-board pairing was suppressed: only 1 cleanly matched log met the slot rule, so we don't surface a stat for that pairing on this page.
  • Modifier analyses reflect meal-level correlations, not controlled feeding trials — causality cannot be established from observational CGM data alone.
