Barely — averaging +21.3 mg/dL in 5,487 single-item logs, with 60.1% of meals landing in the low-spike range. Across 5,487 logged meals where members ate string cheese alone, the average glucose peak was just +21.3 mg/dL (median +16 mg/dL). That puts string cheese among the lowest-spike snacks we've tested — well below chocolate (+29.0 mg/dL) and chips (+38.9 mg/dL). The dominant lever isn't the stick itself; it's what you eat alongside it. Pretzels add +14 mg/dL on top of the alone baseline (n=206), crackers add +8 (n=853), and fruit adds +7 (n=1,154). Keeping total meal carbs under 40g holds the average to +23.5 mg/dL across nearly 24,000 logs.

String cheese is a near-zero-carb dairy snack — a single stick contains roughly 0–1g of net carbs and ~7g protein — and it's the rare food in our dataset where the dominant cohort pattern is also the lowest-spike pattern. 92% of the 26,923 logged meals in our cohort had no carb pairing in our snack vocabulary; those alone-logs averaged just +21.3 mg/dL (median +16). When carbs do show up, they drive most of the response: meals with ≥60g of carbs spiked 82% above the low-carb baseline (n=1,096, p<0.001), and the carb-bucket analysis shows a 99% escalation from +23.5 mg/dL (light, 0–40g) to +46.8 mg/dL (very heavy, 110g+). Smaller modifiers nudge the response in both directions: morning timing cuts peaks by ~11% (n=4,552, p<0.001), while high-fiber pairings — which often come bundled with starch — raise them by ~26%. The mechanism is observational, but the pattern reads as a textbook low-glycemic snack whose response is governed by what's on the plate alongside it.
This page draws on 26,923 string cheese logs from 5,832 unique Signos members — including 5,487 single-item logs where members ate the cheese with no other food — collected through the Signos production CGM platform. Data were filtered to postprandial glucose responses (PPGR) between 0 and 100 mg/dL to exclude sensor artifacts and implausible readings. Modifier effects were estimated using Welch's t-test on matched pairs against a defined baseline; all reported effects carry p<0.001 unless noted. We report mean glucose peak across a right-skewed distribution — the median single-item spike of +16 mg/dL is several points lower than the mean of +21.3 mg/dL, which is typical for this type of data. Because string cheese has a published GI of 0 and GL of 0, the form-anchor values in the recipe builder are forced to 0 mg/dL; cohort means by form (regular +24.6, reduced-fat +25.7, cheddar-blend +23.8) reflect under-reported pairings in member logs and are preserved in the modifiers JSON for transparency. The food was identified using a regex matching 'string cheese' and 'cheese stick' as primary ingredients, excluding mozzarella sticks (breaded fried) and cracker variants like Cheez-Its.
