Three levers dominate outcomes: total carb load at the meal (≥60g carbs pushes the average 44.9% higher than a light build), what you put on the bread (avocado and egg each cut the peak by 7 mg/dL in matched logs; jam adds 7 mg/dL), and meal timing (morning meals averaged 13.6% lower than the non-morning baseline). Across 401 logged meals where members ate white bread alone, the average glucose peak hit +40.4 mg/dL, with 53.6% of responses classified as high-spike. The two largest levers in the cohort are carb load and fat-protein pairing: meals with ≥60g total carbs spiked 44.9% higher than the low-carb baseline (p<0.001, n=1,746), while high-fat pairings (≥15g, n=8,748) trimmed the average by 19.0%. High-fiber content (≥5g, n=7,377) added a 15.4% reduction. These effects are observational, not yet established as causal.
This page draws on Signos production CGM data logged between March 2025 and April 2026, covering 12,858 meals containing white bread across 4,172 unique members (broader cohort), with a single-item sub-cohort of 401 meals (324 unique members) where white bread was logged without other foods. Statistical comparisons use Welch's t-test on matched pairs; all modifier effects cited carry p<0.001 unless noted. Cohort filtering restricts to meals with a measured glucose rise between 0 and 100 mg/dL (ppgr_case='regular'). We report mean peak glucose rise across what is a right-skewed distribution; the single-item median is +37.0 mg/dL vs. a mean of +40.4 mg/dL. White bread meals were identified via regex matching on logged food names. A minimum of 30 matched meals is required for any pairing to appear in the modifier table; high-confidence designations require ≥500 matched logs.
