Fiber moves the curve in the other direction — high-fiber meals (≥5g, n=448) ran 9.4% lower than the low-fiber baseline (p<0.001). These effects are observational, not yet established as causal.
This page draws on Signos production CGM data logged between Mar 2025 and Apr 2026, covering 2,274 meals containing French toast across 1,466 unique members (broader cohort), with a single-item sub-cohort of 249 meals (183 unique members) where French toast was logged without accompanying foods. Statistical comparisons use Welch's t-test on matched pairs; all modifier effects cited carry p<0.001 unless noted. Cohort filtering restricts to meals with a measured glucose rise between 0 and 100 mg/dL (ppgr_case='regular'). The single-item cohort is the primary source for all headline stats (mean +42.3 mg/dL, median +43 mg/dL); the broader cohort supports the modifier and form-variant analysis. French toast meals were identified via regex matching on logged food names. A minimum of 30 matched meals is required for any modifier sub-cohort to appear in the dataset.
