What surprised us
What surprised us about lemon is how cleanly the flavoring-agent pattern showed up across 20,579 logs. Lemon's GI is 37 (low) and its GL is 7 — a low-spike fruit by any conventional measure. But almost nobody eats a whole lemon. The +29.1 mg/dL cohort mean is really a snapshot of what members were eating WITH lemon: fish (+28.1), salad (+28.4), tea (+31.2), wellness water (+25.5). This page draws on 20,579 lemon-tagged logged meals from 6,751 unique Signos members, collected through the Signos production CGM platform between Mar 2025 and Apr 2026. Data were filtered to postprandial glucose responses (PPGR) between 0 and 100 mg/dL to exclude sensor artifacts and implausible readings. The page-primary cohort number (20,579) covers all lemon-tagged meals; a tighter single-item cut (n=4,108, 2,235 members, mean +28.3 mg/dL) was used to characterize the lemon-only signal. Modifier effects were estimated using Welch's t-test on matched pairs against a defined baseline; all reported effects carry p<0.001 unless noted. Because lemon is rarely eaten alone, the form-slot anchors (fresh wedge, lemon water, lemon zest) reflect cohort means of meals where each lemon form was the tagged ingredient — not isolated citrus consumption. The food was identified in member logs using a regex that matched 'lemon' as a primary ingredient, with exclusions for lemongrass, lemon-flavored compounds (lemon pepper, lemon balm), and dishes where lemon is a name component only (e.g., lemon chicken as a chicken dish). Any pairing slot requires at least 100 matched meals before it appears in the recipe builder.

Limitations

  • Self-reported portion sizes introduce measurement error — a logged 'lemon wedge' may vary substantially in actual juice volume, affecting the form-anchor signal.
  • Cohort skews health-motivated; Signos members actively tracking glucose tend to drink lemon water and eat lemon-on-fish at higher rates than the general population, so real-world average pairings may differ.
  • The lemon-zest form sub-cohort has low confidence (n=35) and the lemon-in-dessert pairing has medium confidence (n=107); both should be treated as directional only.
  • Cohort means for lemon-tagged meals appear non-trivial (+29.1 mg/dL) because members log lemon alongside other items — 'logged: lemon; ate: salmon with lemon and rice.' Lemon's own contribution is much smaller than the cohort mean implies.
  • Modifier analyses reflect meal-level correlations, not controlled feeding trials — causality cannot be established from observational CGM data alone.
  • Lemon-flavored desserts, candies, and packaged drinks (lemon-flavored sparkling water, lemonade concentrate) are excluded from this cohort by regex when their primary ingredient is sugar or syrup.
