This page draws on Signos production CGM data logged between Mar 2025 and Apr 2026, covering 11,310 meals containing pancakes across 4,817 unique members (broader cohort), with a single-item sub-cohort of 1,134 meals (763 unique members) where pancakes were logged without accompanying foods. Statistical comparisons use Welch's t-test on matched pairs; all modifier effects cited carry p<0.001 unless noted. Cohort filtering restricts to meals with a measured glucose rise between 0 and 100 mg/dL (ppgr_case='regular'). The single-item cohort is the primary source for all headline stats (mean +38.7 mg/dL, median +36.0 mg/dL); the broader cohort supports the modifier and form-variant analysis. Pancake meals were identified via regex matching on logged food names, excluding protein pancakes (Kodiak / Power Cakes) and potato pancakes (latkes). A minimum of 30 matched meals is required for any modifier sub-cohort to appear in the dataset; the recipe builder uses a threshold of 100.
