In our single-item cohort of 3,878 pretzel logs, the median peak was +41 mg/dL and the IQR spanned 32 mg/dL — a wide range that reflects real person-to-person variability. Three levers dominate the outcome: total carb load at the meal (≥60g builds spiked 22.4% higher than the low-carb baseline, p<0.001), form factor (soft pretzels averaged +6.4 mg/dL above regular, n=1,053), and dip choice (nut butter reduced peaks to +37.2 mg/dL vs. +44.4 mg/dL without a dip). The GI 83 puts pretzels above white bread — higher than chips (+38.9 mg/dL) in matched snack comparisons. These are observational, not causal findings.

The two biggest levers in the cohort are carb load and form: meals with ≥60g total carbs spiked 22.4% higher than lighter builds (p<0.001, n=2,572), while soft pretzels averaged +6.4 mg/dL above regular pretzels in matched logs (n=1,053). Fat and protein pairings offer a secondary reduction — protein ≥15g cut peaks by 8.5%, fat ≥15g by 5.2% — but the base food's near-zero fat content means the glucose curve runs largely unimpeded without deliberate additions. These effects are observational, not yet established as causal.
This page draws on Signos production CGM data logged between March 2025 and April 2026, covering 11,734 meals containing pretzels across 5,068 unique members (broader cohort), with a single-item sub-cohort of 3,878 meals (2,331 unique members) where pretzels were logged without other foods. Statistical comparisons use Welch's t-test on matched pairs; all modifier effects cited carry p<0.001 unless noted. Cohort filtering restricts to meals with a measured glucose rise between 0 and 100 mg/dL (ppgr_case='regular'). We report mean peak glucose rise across a right-skewed distribution; the median is typically a few mg/dL lower than the mean — here, the single-item median is +41 mg/dL vs. a mean of +43.0 mg/dL. Pretzel meals were identified via regex matching on logged food names. A minimum of 100 matched meals is required for any food pairing to appear in the recipe builder; modifier slots with fewer than 100 logs are excluded from that feature.
