Modestly. Across 8,123 soy milk logs, the average glucose peak was +30.2 mg/dL — with 42.1% of responses above +30 mg/dL and a median of +27 mg/dL. Soy milk lands between almond milk and oat milk on the plant-milk ladder, and reads roughly in the same neighborhood as dairy milk. The ~7g of protein per cup is the reason — protein slows gastric emptying enough to blunt what the small amount of carbohydrate would otherwise do. Context is the biggest lever: drunk alone (n=4,920), the average is +30.3 mg/dL; poured on cereal (n=770), it climbs to +38.6 mg/dL; stirred into coffee (n=2,561), it drops to +28.3 mg/dL. Total carb load at the meal level drives the rest of the spread — meals with ≥60g carbs spiked 64.9% above the lighter-carb baseline (n=1,537, p<0.001). These are observational findings, not causal.

Soy milk is the legume of milks — and that biology shows up in the curve. A cup carries roughly 7g of protein, comparable to whole milk and 2–3x what oat or almond milk delivers. Protein slows gastric emptying, which is why soy milk's cohort mean of +30.2 mg/dL sits closer to dairy milk than to other plant milks despite being plant-derived. Across 8,123 logs, 35.8% of responses fell in the low-spike tier (under +20 mg/dL) and the median was +27 mg/dL. Where oat milk's maltose-heavy carbohydrate profile drives a sharper, faster spike, soy milk's protein-and-fat envelope holds the rise lower. The dominant levers in the broader cohort are total carb load (≥60g meals spiked 64.9% higher, n=1,537) and meal-level sugar content (≥20g sugar spiked 60.4% higher, n=1,740). All effects are observational, not established as causal.
This page draws on Signos production CGM data logged between March 2025 and April 2026, covering 8,123 meals containing soy milk across 881 unique members. Statistical comparisons use Welch's t-test on matched pairs; all modifier effects cited carry p<0.001 unless noted otherwise. Cohort filtering restricts to meals with a measured glucose rise between 0 and 100 mg/dL (ppgr_case='regular'). We report mean peak glucose rise; the distribution is right-skewed and the median is +27 mg/dL vs. a mean of +30.2 mg/dL. Soy milk logs were identified via regex matching on logged food names ("soy milk", "soymilk", "soya milk"), excluding soy protein shakes. A minimum group threshold of 30 matched meals is required for any modifier to appear in the calculator; high-confidence threshold is ≥500 logs.
