This page draws on 2,915 single-item Espresso logs (meals where espresso was logged alone, no pairings) from members of the Signos production cohort, plus a broader 18,587-meal cohort from 2,829 unique members spanning all meal contexts where espresso appeared. Data were filtered to postprandial glucose responses (PPGR) between 0 and 100 mg/dL to exclude sensor artifacts. Modifier effects were estimated using Welch's t-test on matched pairs against a defined baseline; all reported effects carry p<0.001 unless noted. Because espresso has a published GI of 0 and GL of 0, the form-anchor calculator values are explicitly overridden to 0 (the cohort default-form mean of +26 mg/dL is preserved in the per-option metadata as `option_mean_full_cohort` for transparency). The food was identified using a regex matching "espresso", "ristretto", or "doppio". Carb-pair sub-cohorts require at least 100 matched logs before they appear in the recipe builder.
