What surprised us about the latte cohort is how flat the milk choice came out. Across 1,888 builder logs, almond / oat / soy milk lattes averaged +31 mg/dL — only +1 mg/dL different from the whole-milk plain anchor. The popular fix (switching to oat or almond) doesn't move the curve. The actual fork in the data is sugar: vanilla and pumpkin-spice variants ran +34 to +38 mg/dL, and a pastry on the side added +15 mg/dL. The drink isn't the problem; the syrup and the croissant are.

Across 14,249 single-item logs, the average peak was +28.1 mg/dL, with 41.5% of responses landing under +20 mg/dL. Lactose (~12g per cup of whole milk) drives most of that response; espresso contributes essentially zero carbs. The two biggest amplifiers in the broader 32,083-log cohort are added sugar and total carb load: high-sugar meals (≥20g sugar, n=10,238) spiked 70% above the low-sugar baseline (CI: +15.9 to +16.95 mg/dL, p<0.001), and high-carb meals (≥60g, n=3,798) spiked 58.7% higher (p<0.001). Flavored syrups are how those amplifiers enter the cup; pastries on the side are how they enter the meal. All modifier effects are observational, not causal.

This page draws on Signos production CGM data logged between March 2025 and April 2026, covering 32,083 meals containing a latte across 6,373 unique members (broader cohort), with a single-item sub-cohort of 14,249 meals (3,964 unique members) where a latte was logged without other foods. Statistical comparisons use Welch's t-test on matched pairs; all modifier effects cited carry p<0.001 unless noted otherwise. Cohort filtering restricts to meals with a measured glucose rise between 0 and 100 mg/dL (ppgr_case='regular'). We report mean peak glucose rise; the distribution is right-skewed, and the single-item median is +24 mg/dL versus a mean of +28.1 mg/dL. Latte logs were identified by regex on member-logged food names, excluding chai, matcha, and turmeric latte variants (which are tea-based and tracked separately). A minimum group threshold of 30 matched meals is required for any modifier to appear in the calculator; high-confidence threshold is ≥500 logs.

Limitations

  • Self-reported portion sizes introduce noise — a logged 'latte' may range from a 6 oz cortado to a 20 oz venti, affecting milk volume, sugar dose, and peak estimates.
  • Cohort skews health-motivated; Signos members tend to be more metabolically aware than the general population, so average responses may be lower than a representative sample would show.
  • Skim / nonfat latte sub-cohort is medium confidence (n=318); the −0.4 mg/dL delta vs. plain whole-milk is statistically thin and should be treated as directional only.
  • Caramel latte / macchiato (n=279) and pumpkin-spice (n=391) sub-cohorts carry medium confidence — the +0.6 and +8 mg/dL deltas reflect smaller samples than the high-confidence form variants.
  • Member logs do not consistently distinguish 'sweetened' from 'unsweetened' for a given barista build, so the plain anchor likely contains some logs with small amounts of added sugar.
  • Modifier analyses reflect meal-level correlations, not controlled feeding trials — causality cannot be established from observational CGM data alone.
