The drink-level fork is brand: commercial bottled bottles averaged +31 mg/dL (n=3,340), raw / home-brewed +32 mg/dL (n=974), fruit-flavored +33 mg/dL (n=623), and hard kombucha +23 mg/dL (n=81, low confidence — small sample). The bigger lever is meal context: kombucha alone averaged +27.5 mg/dL while multi-item meals averaged +33.8 mg/dL, a 23% combo effect. Sandwich pairings pushed peaks to +42.7 mg/dL — observational, not yet causal.

Kombucha's published glycemic index of 25 (GL=2) classifies it as low-glycemic, but the cohort data tells a more nuanced story. Across 5,641 logs the mean peak was +31.8 mg/dL — modestly higher than the GI alone would suggest, with a wide spread driven by brand sugar content and meal context. Three measured levers shape the response. First, total meal carb load: meals with ≥60g carbs ran 49% above the light-carb baseline (p<0.001), and the carb-bucket analysis shows a near-linear escalation from +28.5 mg/dL in light (0–40g) meals to +45.2 mg/dL in very-heavy (110g+) meals — a 59% jump. Second, residual brewing sugars: commercial brands typically add 2–12g of sugar per 8 oz post-fermentation, which the cohort registers as a +35% effect for the high-sugar (≥20g) bucket (n=1,132). Third, individual variability: the IQR spans 26 mg/dL (p25: +17, p75: +43), so the same drink behaves very differently across members. Hard kombucha sits as an outlier at +22.6 mg/dL on average — likely reflecting both fully-fermented residual sugar and ethanol's acute suppression of hepatic glucose output — though the small sample (n=81) keeps that finding directional rather than firm.
This page draws on 5,641 kombucha logs from 1,741 unique Signos members, collected through the Signos production CGM platform. Data were filtered to postprandial glucose responses (PPGR) between 0 and 100 mg/dL to exclude sensor artifacts and implausible readings. The cohort was identified using a regex matching "kombucha" as the primary drink in the log. Brand-fork sub-cohorts were assigned via secondary regex matches (raw/home-brewed, fruit-flavored, hard) with all unmatched logs falling into the commercial-bottled default. Modifier effects were estimated using Welch's t-test on matched pairs against a defined baseline; all reported effects carry p<0.001 unless noted. We report mean glucose peak across a right-skewed distribution — the median spike of +29 mg/dL is a few mg/dL lower than the mean of +31.8 mg/dL, which is typical for this type of data. Any carb-pair slot requires at least 100 matched meals before it appears in the recipe builder.
