What surprised us
What surprised us about rye bread is the deli-meat math. A Reuben — pastrami on rye with sauerkraut and Russian dressing — sounds like a spike-bomb, but in our cohort rye-with-deli-meat (n=710) averaged just +39.3 mg/dL, only +2 mg/dL above rye alone with butter.
